What is Milk?

Milk is defined as an emulsion of fat and protein in water, along with dissolved sugar (carbohydrate), minerals, and vitamins. The liquid is secreted by the mammary glands of female animals to nourish their young for a period beginning immediately after birth. 1


Where Does Milk Come From?

There are many different types of animals that produce milk, including insects, amphibians, fish, and reptiles, however, not all of it is suitable for human consumption. 2


In Delaware today, milk produced for commercial sale comes from dairy cows. According to the Delaware Department of Agriculture, in 2021 our cows produced around 52 million pounds—or 6.23 million gallons of milk! 3

Milk provides almost every single nutrient needed by humans, making it one of the most nutritious foods available. As the primary sustaining food during early life for mammals and many other animals, milk provides all the required nutrients: water, proteins, fats, milk sugar, vitamins and minerals. As we get older, the magic of milk continues, supporting the development of strong bones and teeth, increased muscle mass, and energy. 4


Our Economy

For over 100 years, Delaware's dairy industry has been a vital segment of the state's agricultural economy. In Delaware, milk sales rank fifth in agricultural receipts and top the income of all livestock products except poultry. 


Milk was designated the official state beverage of Delaware in 1983! 5
